TAFE NSW Commercial Cookery and Agriculture students are teaming up to harvest their own honey to be used in the TAFE NSW campus restaurant.
TAFE NSW Head Teacher, Mary Allan, says the honey will be used in a variety of ways, depending on the students’ creativity.
“It could be used in an array of desserts or served with tea or even have honey-marinated pork,” says Mary. “I’ll leave that up to the students to decide when they’re preparing menus for our training restaurant.
“It’s very exciting for the students to be sourcing sustainably and cutting out the middle man.”
The honey and honeycomb was harvested by TAFE NSW teacher Kirk Trease and was served by students during work experience at Byron Bay’s Bluesfest. The nectar topped off yoghurt desserts which were given out to staff and volunteers at the event.
All the students will gain a first-hand understanding of harvesting honey once the hive comes on campus.
TAFE NSW Agriculture students also grow herbs, vegetable gardens, orchards, organic crops and beneficial flowers – including cosmos, borage and coneflower – for the purpose of attracting beneficial bugs to their TAFE NSW gardens.
