Through a mixture of theory and practical course work, learn to:

  • Select, use and clean food preparation equipment according to the manufacturer's procedures

  • Portion and prepare ingredients to cook a range of dishes using a range of cookery methods

  • Present dishes using garnishes and accompaniments to an industry standard

  • Follow hygiene procedures and identify food hazards

  • Participate in and follow work health and safety practices
