This Certificate II in Bakery is your gateway to the industry and covers the skills and knowledge you will need to work as a Bakers Assistant.

Once you have successfully completed the Certificate II, you will be ready to take on an Apprenticeship at Certificate III level in the baking industry.

There are no excursions behind the scene for this course. However, you will learn in our fully equipped industry standard simulated bakery that provides you with the opportunity to get real, hands-on baking experience.

You will participate in a range of structured workshop activities that allow you to practice your baking skills before attempting assessments.

In the commercially designed campus bakery, you will work on baking projects like make-and-bake pastry, bread, meringues, donuts, biscuits and cakes. This enables you to gain experience in a simulated work setting that will enhance your learning and prepare you for your assessments.

Facilities at each NSW TAFE delivery campus include a commercially designed bakery with industry standard equipment found in different types of bakehouses, including:

  • Large-scale retail bakery
  • Franchise bakery
  • Small bakery chain and small to medium independent retail bakery
  • Specialist bakery and patisseries

You will also have access to a classroom, computer room, library and cafeteria.

This qualification was designed with industry to support growth that is forecast in the baking industry.

You will be able to put your technical skills to work, baking in the capacity of a bakers or retail assistant in a commercial or retail bakery.
