The Certificate III in Bread Baking is the trade qualification you need to become an in-demand bread or artisanal baker in the fast-growth baking industry. Master the art of producing breads, including specialty and artisan products, and learn to run a retail operation in our fully equipped commercial bakery.

Assessments give you the opportunity to demonstrate what you have learned so far and identify what knowledge or skills need further development. In this course you will undertake:

  • Theory knowledge assessments
  • Practical skills assessments

  • Projects to create a product from scratch

You will participate in a range of structured workshop activities that allow you to practice your skills before attempting assessments.

The Certificate III level qualification covers introductory bakery skills that enable you to work as a bakers assistant and sets you up for success in the Certificate III trade qualification.

This course, the Certificate III level is a trade qualification and covers the skills and knowledge you need to work in the industry as a bread or artisanal baker.

This course does not offer excursions however you will get a behind the scenes experience through your apprenticeship, as well as in the TAFE NSW campus bakery.

You will gain hands-on experience in:

  • Different dough moulding techniques
  • Finishing techniques
  • Production methods
  • Different product varieties and shapes
  • Dough retardation

TAFE NSW is known for delivering theory accompanied with practical, hands-on learning. Learn by doing and work on real world projects, like following a production schedule and baking from scratch the requirements of the day.
