The nationally accredited Statement of Attainment in Introduction To Patisserie gives you the foundational knowledge to make, bake and create delectable cakes and pastries. Knead, mix and decorate in your first step on the study path of becoming a Pastry Chef or Patissier.

This is a fully government subsidised JobTrainer course. Eligibility criteria applies.

LEARN NEW SKILLS

Through theory and practical course work learn to:

  • Identify food ingredients and their uses
  • Weigh, measure, prepare and portion ingredients
  • Bake a range of cakes and sponges including Swiss rolls, sponge cakes, pies and tarts
  • Make icings, decorations and cream fillings
  • Make products with varied pastry types including choux and puff
  • Use hygienic practices for food safety and reduce food contamination risks
  • Work health and safety practices including emergency procedures
