Overview

This meat processing course will provide you with entry level skills to prepare meat products for retail sale, including speciality meat cuts and gourmet meat. You will learn the key techniques of a professional meat cutter as well as skills in meat preparation, packaging and customer service. You will also learn how to comply with Quality Assurance (QA) and Hazard Analysis and Critical Control Points (HACCP) requirements as well as to follow safe work, hygiene and sanitation practices for employment in the meat industry.
