Sori Jeong piped her way to success

The art of cake decorating has a special place in every baker’s repertoire, but for TAFE NSW Australian Patisserie Academy teacher, Sori Jeong it’s her expertise.

Sori had always had a passion for food, studying at Le Cordon Bleu then working as a chef in some of Sydney’s best hotels, before discovering her real passion – cake decorating.

“I really enjoyed designing and creating beautiful cakes, however I had a very fond interest in Korean buttercream flowers. After months of attempting to master the skill by watching YouTube videos, I discovered if I wanted to grasp the art of buttercream flowers, I needed to learn from the experts.”

With a natural talent Sori decided to follow her passion, flying to Korea to undertake intensive training to master the skill.

“During the eight-day intensive training, I learnt the complex art of buttercream flowers from some of the industry’s best teachers. They helped me to understand the precision and intricacy of the art, which I continued to practice until it became second nature to me.”

Opening her own business, IncrEdible Flower Cakes in 2016, Sori’s stunning creations were in high demand, causing the business to be one of the fastest growing unique cake shops in Sydney.

“The business started out with me attending markets on the weekend but quite quickly grew with orders coming in for weddings and birthdays. I soon realised there was not only a high demand for the cakes, there was also a demand for people wanting to learn the skill of creating buttercream flowers.”

In 2017, Sori joined the team of experts at TAFE NSW Australian Patisserie Academy, where she teaches a range of courses in cake design and decoration, including buttercream piping classes.

“I love teaching a variety of classes at TAFE NSW Australia Patisserie Academy, from classes for baking novices to very advanced classes for those looking to upskill.

“In the more advanced classes students learn complex techniques, using buttercream piping to create a range of flowers, foliage and wreath designs. Whereas the beginner classes teach students the basics of creating the meringue buttercream, which piping nozzles to use and how to pipe the flowers directly onto cupcakes.”

Showcasing her work on the Instagram account @incredibleflowercakes, Sori mesmerized her 35,000 followers with her beautiful cakes and cupcakes.
