TAFE NSW alumni now working in top Sydney restaurant 

The hospitality industry is fast-paced, vibrant and is one of the most diverse and largest employers across the globe. Three TAFE NSW hospitality past and present students have taken their qualification and are now working in one of Sydney’s top restaurants. 

Headed up by Jacqui Challinor alongside Senior Chef de partie Remy Davis and apprentice chef, Jeremy Chau, the TAFE NSW past and present students are working in the kitchen at NOMAD.

It is due to the strong relationships with employers that TAFE NSW teachers have been able assist current students and alumni to secure employment in the NOMAD kitchen and within other culinary institutions.

Two days into his commercial cookery course at TAFE NSW Ultimo, Jeremy Chau, who relocated from Wagga Wagga to follow his passion, secured himself a job in the kitchen at NOMAD thanks to his teacher, Scott Wilson.

“I’ve always had a passion for food, so I relocated to Sydney to follow my career dreams. I feel most comfortable in the kitchen as I am doing something that I really love, and am excited about the opportunities working in this space will create for me. I was fortunate enough to have Scott as a teacher who introduced me to Jacqui. Two days later, I found myself in the NOMAD kitchen learning how to prepare their famous charcuterie board.

“After working in the kitchen for a few days, I discovered I’m not the only trained TAFE NSW student working at NOMAD. I was blown away to find out that another two employees were also TAFE NSW graduates including our head chef, Jacqui.

“Studying at TAFE NSW is a great place to learn and experience what it is like to work in the hospitality industry. I’ve found the course content is tailored to my learning needs to help me reach my goals and apply these skills to my current position at NOMAD,” Mr Chau said.

Recently celebrating their fifth birthday, the one-hatted restaurant is an institution in Sydney. Situated in a warehouse with a large open central kitchen and bar, NOMAD is all about bringing together family and friends in a beautiful atmosphere. From preparing their own bread every day, to producing their own charcuterie and house-made cheese, NOMAD is all about the best of Australian produce.

TAFE NSW is the largest cookery-training provider in NSW and in Sydney. Hospitality students train in commercially equipped kitchens, and have the opportunity to practice their skills in the Apprentice Training Restaurant. Open to the public for lunch and dinner, the restaurant is a classroom where the future stars of the hospitality industry develop and demonstrate their talent to the public.

The long list of TAFE NSW hospitality alumni include chefs such as Luke Mangan, Matt Moran, Josh Niland, Ed Halmagyi, Giovanni Pilu and wine maker Lisa McGuigan.

Commercial Cookery courses are now available for enrolment at TAFE NSW.
