The nationally recognised Certificate II in Kitchen Operations builds the technical skills and industry knowledge you need to work in a commercial kitchen as a breakfast cook, catering assistant, fast food cook, sandwich hand or takeaway cook.

INDUSTRY DEMAND

The Certificate II in Kitchen Operations helps address a skills shortage in the hospitality industry and prepare for its forecasted growth over three years to 2023.

ENTRY REQUIREMENTS

TAFE NSW offers the Certificate II in Kitchen Operations as either a traineeship (including school-based traineeship) or non-traineeship, so you can build the career you want.

Non-traineeship

There are no entry requirements for non-trainees enrolling in this course.

Traineeship
To be eligible for this course you must:

  • Be employed in the food industry as this course is delivered in the workplace and signed into a traineeship contract or
  • A school student undertaking a TAFE NSW delivered Vocational Education and Training (TVET) course

WORK PLACEMENT

At TAFE NSW we provide training that includes hands-on, practical experience.
This qualification requires students to complete up to 12 periods (shifts) or 60 hours of work placement as part of 1 unit - SITHCCC011 Use cookery skills effectively.

Depending on the campus you study at, you may complete this unit requirement at:

  • An on-campus restaurant or caf or
  • A suitable industry equivalent

Work Placement is a requirement of this course, you will need to complete:

  • at least 12 service periods in documented work placement as detailed in the Assessment Requirements of the units of competency. Securing a suitable work placement with an employer is the responsibility of the student, however your teacher can assist with this process. All of these placements may be completed in the simulated work environment at TAFE NSW.

National Recognition

  • Please provide evidence of any previous study that you have completed at school, TAFE or any other RTO in order to gain National Recognition.

Recognition of Prior Learning (RPL)

  • Please provide evidence of previous work experience if you wish to claim Recognition of Prior Learning (RPL).

EMPLOYMENT PATHWAYS

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
This qualification is specifically designed for cooks. All of the delivery for the qualification occurs on-the-job at the TAFE College.

STUDY COMMITMENT

This is a full-time, blended delivery course that includes connected learning which is run over 6 months. You will need to attend approximately 13 hours of class, over 2 days per week, for 18 weeks. As well as the in-class component, you will need to complete approximately 1 hour of other study per week.

You may also be required to complete approximately 3 hours of additional study each week outside of class hours, including research and private study.

To complete this qualification, you may be required to undertake connected theory classes via an online platform such as Microsoft Teams as well as practical skills and assessments at a TAFE College two days a week.

As part of this course, you may be asked to undertake role play assessments via connected technologies such as Microsoft Teams and submit your assessment/s electronically to your teacher/s through either the TAFE NSW Moodle or Microsoft Teams.

TAFE NSW Campbelltown will support TAFE students with their learning who may have computer and internet access issues.

This course offering is designed for people from diverse backgrounds, including:

  • Learners are from diverse backgrounds including school leavers, mature age, career change, long term unemployed, returning to work and existing workers wanting formal qualifications. Training and assessment strategies reflect the skills and knowledge required of industry and industry practices are holistically assessed during the delivery of the units. Students will be assessed in a number of different methods, using written and spoken English.

This course is for a pre-employment cohort of students seeking employment to work in organisations such as restaurants, hotels, motels, clubs, pubs, cafes, and coffee shops.

This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills to prepare food and menu items. They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not provide the skills required by commercial cooks, which are covered in SIT30816 Certificate III in Commercial Cookery.

This course is currently scheduled on Wednesday from 8:30am to 4:30pm, and Thursday from 8:30am to 2:00pm. This timetable may change and will be confirmed by your teacher.

SMART AND SKILLED FEES

This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

An initial payment of $80 is required to confirm your enrolment into this course. If you do not wish to continue with your enrolment, you must formally advise Customer Service of your withdrawal. If you do not withdraw prior to the first date of the course, this initial payment is non-refundable. If you have any further questions, please contact us on 13 79 74.

ADDITIONAL RESOURCES

Additional costs associated with this course are:

  • Uniform - approximately $100.00 to $200.00 you will need to provide for yourself the following resources which you will keep when you complete your study:
    -Full uniform - long sleeve white Chefs jacket with white buttons, checked Chefs pants, white half apron, enclosed boots, white neckerchief and Chefs hat (approximately $100.00-$200.00). This must be purchased at a Hospitality supply store such as Unicut or Fraser & Hughes.
  • Equipment kit - toolkits will be supplied to students and must be returned at the end of each class. If you choose to supply your own, this must be purchased from a Hospitality supply store such as Unicut or Fraser & Hughes, and will cost approximately $200.00-$350.00
  • You will also be required to hire a locker - this costs $20.00 and is organised through our EAS in Block F, Room F.G.12 in the first week of classes. No bags are permitted in the classrooms, kitchens or restaurant areas. Locker fees are refunded at the end of the semester.
