Course Details

This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

**COURSE ENTRY REQUIREMENTS**

To be enrolled in this course, you need to be able to provide evidence that you are:

  • an apprentice (you will work in industry and study at the same time)
  • employed full time
  • signed up with an Apprentice Network Provider and have a Training Plan Proposal
  • seeking to gain skills and knowledge to become a qualified Commercial Cook after successful completion.

STUDY COMMITMENT

This is a part-time day face to face course. You will need to attend approximately 7 hours of class, over 1 day a week, for 2 years. As well as the in-class component, you will need to complete approximately 10 hours of other study per week.

You may also be required to complete approximately 1 hour of additional study each week outside of class hours, including independent study, research, practice and assignments.

This course is currently scheduled on Monday from 8.30am to 4.30pm for 2020 and Tuesdays 8.30am to 4.30pm in 2021. This timetable may change and will be confirmed by your teacher.

SMART AND SKILLED FEES

This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

"ADDITIONAL RESOURCES

You will need to provide for yourself the following resources which you will keep when you complete your study:



  • NSW Food Authority require a valid certificate to be issued to students that are competent in: 1. Handle food safety in a retail environment (SIRRFSA001); 2. Use hygienic practices for food safety (SITXFSA001); or 3. Participate in safe food handling practices (SITXFSA002). TAFE obtain this certificate on behalf of the student: $30.00

  • Chefs Uniform (chefs pants, Jacket, Apron, hat and non-slip shoes): approximately $150.00

  • Futura Reference Text: approximately $300.00

  • Chefs Tool Kit: approximately $290.00

RECOGNITION

Before you can start an apprenticeship, you first need to find an employer in the industry you're interested in that will support you through your studies. You and your employer should contact an Apprenticeship Network Provider (ANP) and tell them you're interested in studying at TAFE NSW.
The ANP will help you and your employer to complete a Training Contract. Once you have a Training Contract, we will help you, your employer and the ANP to complete a Training Plan Proposal. Once you have both these documents, the ANP will lodge them with State Training Services, who will provide further advice about next steps.
