Course Details
This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.
This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

There are no entry requirements for this qualification.To successfully complete this course, you will need:
- to attend TAFE classes and have additional attendance for function work and/or work placement
- to be able to work with some independence and under limited supervision using plans, policies and procedures to guide work activities
- to achieve the course outcomes by having the learning, reading, writing, literacy, and numeracy competencies of level 3 of the Australian Core Skills Framework (ACSF) See http://education.gov.au/search/site/ACSF
Applicants who have a lower level of language, literacy and numeracy skills can access additional support to successfully complete the course.
Options may include co-enrolment in a Foundation Skills qualification or individual learner support.
All students for this course are required to complete ARE YOU READY or BKSB assessment. This will assist us to organise tutorial support for students.

STUDY COMMITMENT
This is a Full Time face-to-face course. You will need to attend approximately 20.3 hours of class, over 3 days a week, for 36 weeks. As well as the in-class component, you will be required to attend function work and/or work placement.
You may also be required to complete approximately 3.4 hours of additional study each week outside of class hours, including Assessment preparation 2 hours per unit for 22 units, Private Study 2 hours per unit for 25 units, Assignment research 3 hours per unit for 10 units

- are seeking employment to work in organisations such as restaurants, hotels, motels, clubs, pubs, caf?s, and coffee shops
There are no formal Training Package entry requirements for this qualification.

This course is currently scheduled on Monday from 9.00am to 3.30pm, Tuesday and Wednesday from 9.00am to 4.00pm. This timetable may change and will be confirmed by your teacher.
SMART AND SKILLED FEES
This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.
Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

- Personal Protective Equipment (PPE) which includes Chefs Uniform (approximately $90.00)
- White Long sleeve Chef Double Breast Jacket, Black and White Checker Pants, White Apron, Safety Shoes, Chefs Hat and Tool Box (approximately $230.00)
- Use Hygienic Practices for Food Safety textbook (approximately $30.00)
- For learners who are seeking the Food Safety Supervisor Certificate (additional fee of $30.00)
