This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.
This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

This is a Full Time Face to Face course. You will need to attend approximately 16.5 hours of class, over 3 days a week, for 1 year. As well as the in-class component, you will need to complete approximately 18 hours of other study per week.
You may also be required to complete approximately 4 hours of additional study each week outside of class hours, including class preparation and independent research.

This course offering is designed for people who:
- have an interest in cooking and would like to refine their technical skills or turn a hobby into a career
- are wishing to re-skill or who are working in the industry and wish to gain a formal qualification
- are non-trade students
- are able to use discretion and judgement, work with some independence and under limited supervision using plans, policies and procedures to guide work activities
Students with special needs may require adjustment to learning and assessment strategies. Reasonable adjustment should be based upon individual needs and abilities which conform to the industry competency standards as outlined in the Training Package.

This course is currently scheduled on Tuesday and Thursday from 8.00am to 4.30pm and Friday from 10.00am to 1.00pm This timetable may change and will be confirmed by your teacher.
SMART AND SKILLED FEES
This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.
Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

You will need to provide for yourself the following resources which you will keep when you complete your study:
- Average cost of Chefs uniform $80
- Shoes/Boots $60
- Chef Toolkit (Approx $300)
- Students will need to apply to the NSW Food Authority and pay $30 for their Food Safety Supervisors Certificate on successful completion of SITXFSA001 Use hygienic practices for food safety and SITXFSA002 Participate in safe food handling practices.
