Course Details

This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

To successfully complete this course, you will need:

  • Chef Jacket Long sleeve white

  • Chef hat white semi disposable or skull cap

  • Chef pants, traditional check

  • Chef apron knee length white

  • Chef buttons, white

  • Chef neckerchief, white

  • Safety footwear non slip shoes (Not training shoes)

  • Knife and Equipment Kit as stated

    Mandatory Workplace Requirements

  • A requirement of SITHCCC020 Work effectively as a cook, is to integrate technical skills and provide food service to customers for a minimum of 48 complete service periods (shifts). Students can complete these shifts on campus or have them signed off by a workplace supervisor if they are employed in industry, there are 48 service periods are schedule into the students timetable.

    The Commercial Cookery Teacher will make contact with the workplace to ensure that they have sufficient equipment and materials to support the students in demonstrating the required skills. The workplace details are collected and stored on the Workplace Observation Checklist and Logbook kept by the students as evidence.

STUDY COMMITMENT

This is a Full Time Face to Face course. You will need to attend approximately 16.5 hours of class, over 3 days a week, for 1 year. As well as the in-class component, you will need to complete approximately 18 hours of other study per week.

You may also be required to complete approximately 4 hours of additional study each week outside of class hours, including class preparation and independent research.

  • are able to use discretion and judgement, work with some independence and under limited supervision using plans, policies and procedures to guide work activities

    Students with special needs may require adjustment to learning and assessment strategies. Reasonable adjustment should be based upon individual needs and abilities which conform to the industry competency standards as outlined in the Training Package.

This course is currently scheduled on Tuesday and Thursday from 8.00am to 4.30pm and Friday from 10.00am to 1.00pm This timetable may change and will be confirmed by your teacher.

SMART AND SKILLED FEES

This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.
