This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.
This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

This is a full time, face to face course. You will need to attend approximately 15.2 hours of class, over 3 days a week, for 36 weeks. As well as the in-class component, you will need to complete approximately 11.7 hours of other study per week.

Attendance days in Semester 1 are Monday and Tuesday from 9.00am to 4:30pm, and Thursday from 1:30pm to 9:00pm. Attendance days in Semester 2 are Monday, Tuesday and Thursday from 1:30pm to 9:00pm.
SMART AND SKILLED FEES
This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.
Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

You will need to provide for yourself the following resources which you will keep when you complete your study:
- Chef's long pants
- white Chef's jacket (with white buttons)
- black apron
- Chef's cap hat
- fully closed non-slip shoes
It is advised that you start to compile a cooks toolkit that will assist you throughout the course. ?The Chef's kit contains commercial grade kitchen tools, a range of Chef knives, balloon whisk, zesters, wooden spoon, scrapers and pastry brush. Toolkits are available from TAFE for use. ?
