Course Details

The nationally accredited Certificate III in Commercial Cookery prepares you for success as a cook or chef in the hospitality industry. Learn to operate in a busy kitchen, build your culinary knowledge and skills and produce delicious food for paying customers.

ENTRY REQUIREMENTS

TAFE NSW offers the Certificate III in Commercial Cookery as an apprenticeship. There may also be options available for you to study as a non-apprentice.

Apprenticeship
To be eligible for this course, you must:

  • Be employed as anapprentice in the commercial cookery industry as evidenced by a letter of support from your employer
  • Submit your Training Plan Proposal (TPP) with your application

Non-apprenticeship
There are options available for you to study as a non-apprentice. Enquire today and one of our Apprenticeship and Traineeship team will help you understand any eligibility or entry requirements.

WORK PLACEMENT

Work placement is not a requirement of this course. However, a requirement of this course is that students complete 48 service periods.

Of these 48 service periods, 23 of them will be completed in a simulated industry environment with real paying customers on the TAFE campus. The remaining 25 service periods will need to be completed in industry, either in paid or voluntary employment.

ADDITIONAL REQUIREMENTS

With 130 locations across the state, TAFE NSW tailors qualifications to meet the needs of the local community and specific student groups (like apprentices, fast-tracked and online students). To make sure this course is the right fit for you, we will need you to demonstrate that you can meet the additional requirements below.

To be enrolled in this course, you need to be able to provide:

  • any previous study that you have completed at school, TAFE or any other RTO in order to gain National Recognition
  • any work experience if you wish to claim Recognition of Prior Learning (RPL)
  • be signed as an Australian Apprentice - Apprentice papers or Training Plan

Work Place is a requirement of this course. You will need to complete at least 48 service periods in documented work placement, as detailed in the Assessment Requirements of the Units of Competency.
Apprentices will complete this work placement requirement within their work places.

STUDY COMMITMENT

This is a part time day course. You will need to attend approximately 7.6 hours of class, over 1 day a week, for 2 years. As well as the in-class component, you will need to complete approximately 12.9 hours of other study per week.

You may also be required to complete approximately 0.7 hours of additional study each week outside of class hours, including assessment/assignment preparation and private study.

This course offering is designed for Apprentices Only:

  • This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items.
  • Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.
  • This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
  • No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

You are required to attend one of the information sessions where you will be advised on course and uniform requirements, plus given your program.

EMPLOYMENT PATHWAYS:

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafs, and coffee shops.
This qualification is specifically designed for cooks. All of the delivery for the qualification occurs on-the-job at the TAFE College.

SMART AND SKILLED FEES

This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

ADDITIONAL RESOURCES

  • Full uniform: long sleeve white Chefs jacket with white buttons, checked Chefs pants, white half apron, non-slip enclosed boots, white neckerchief and Chefs hat (approximately $100.00-$200.00).
    This must be purchased at a Hospitality supply store such as Unicut or Fraser & Hughes.
  • Equipment kit: full Commercial Cookery toolkit (approximately $200.00-$350.00).
    This must be purchased at a Hospitality supply store such as Unicut or Fraser & Hughes.
  • License fee: this covers the Food Safety Supervisor certificate ($30.00). If you already have this you are not required to pay the fee.
