The nationally accredited Certificate III in Patisserie equips you with the technical skills and knowledge you need to be a pastry chef or ptissier. Learn how to create a range of delectable desserts with this exciting TAFE NSW course and be part of a growing industry.

TAFE NSW offers the Certificate III in Patisserie as an apprenticeship. There may also be options available for you to study as a non-apprentice.

To be eligible for this course, you must:

  • Be employed as an apprentice in the Patisserie industry evidenced by a letter of support from your employer
  • Submit your training plan proposal (TPP) with your application

  • The ability to budget for equipment including a baking student uniform and a Chefs toolbox (approximately AUD$500)

To make sure this course is the right fit for you, we will need you to demonstrate that you can meet the additional requirements below.

To be enrolled in this course, you need to be able to provide evidence that you are:

  • over the age of 21 or have employment in a pastry kitchen to enrol in the non-apprentice offering for this trade course.

A requirement of SITHCCC011 Use cookery skills effectively is to integrate technical skills and provide food service to customers for a minimum of 12 complete service periods (shifts). Students can complete these shifts on campus or have them signed off by a workplace supervisor if they are employed in industry, there are 12 service periods are schedule into the students timetable.
The Commercial Cookery Teacher will contact the workplace to ensure that they have sufficient equipment and materials to support the students in demonstrating the required skills. The workplace details are collected and stored on the Workplace Observation Checklist and Logbook kept by the students as evidence.


There are no information sessions currently scheduled for this course.


This is a part time, blended course. You will need to attend approximately 7 hours of class, over 1 day a week, for 2 years. As well as the in-class component, you will need to complete approximately 1.4 hours of other study per week.

You may also be required to complete approximately 1 hour of additional study each week outside of class hours, including class preparation and independent research.


This course offering is designed for people who have an interest in patisserie (pastries and cakes) and would like to refine their technical skills or turn a hobby into a career. It is a great qualification for new entrants, students wishing to re-skill or re-entering the workforce. It can be delivered as an apprenticeship or to non-trade students.

The way you learn may change during your enrolment to ensure the best learning experience or to keep you safe as COVID-19 restrictions change, and some of our face to face classes may change to online or virtual classroom learning. Also, to ensure that we keep you safe while studying, we may modify our face to face classes to meet physical distancing requirements and increased cleaning on campus. If work placement and the demonstration of practical skills are requirements of your course, there may be a modification or delay in the planned timeframe due to COVID-19 impacts. Be assured, we'll keep you informed every step of the way.

This course is currently scheduled on Monday from 8.00am to 4.30pm. This timetable may change and will be confirmed by your teacher.


This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

You will need to provide for yourself the following resources which you will keep when you complete your study:

  • Chefs uniform, average cost: $80.00
  • Shoes/Boots, average cost: $60.00
  • Chef Toolkit (optional $300.00)

Students are required to have a traditional Chef's uniform consisting of:

  • check trousers
  • white long sleeve double breasted chef's jacket
  • white knee length apron (no bibs)
  • white necktie
  • chef's scull cap
  • Leather shoes or boots with no-slip soles (no training shoes)

Students will need to apply to the NSW Food Authority and pay $30.00 for their Food Safety Supervisors Certificate on successful completion of SITXFSA001 Use hygienic practices for food safety and SITXFSA002 Participate in safe food handling practices.
