This qualification reflects the role of pastry chefs who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.
This qualification provides a pathway to work in various organisations where patisserie products are prepared and served, including patisseries, restaurants, hotels, catering operations, clubs, pubs, cafs, and coffee shops.
No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

- The target participants for this cohort are new entrants, school leavers, retraining, re-entry to the workforce to gain employment in the hospitality industry as a pastry chef/Patissier.

This course is currently scheduled for 1-2 days a week. An individual training plan will be provided when you enrol in this course. Your plan will outline the recommended study timetable and detail your units and assessments.
SMART AND SKILLED FEES
This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.
Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

You are required to purchase uniform, tools and prescribed text for this course at a total cost of approximately $1200. Uniform and tools are required from the first lesson and all practical classes. Further information is provided with your timetable. Classes will be at Ryde and/or Meadowbank campus.
