Course Details

This qualification reflects the role of pastry chefs who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.

This qualification provides a pathway to work in various organisations where patisserie products are prepared and served, including patisseries, restaurants, hotels, catering operations, clubs, pubs, cafs, and coffee shops.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

To complete all unit assessments to a satisfactory industry standard. The following units require that you must participation in services within an industry environment SITHCCC011 ? Use cookery skills effectively and SITHKOP005 ? Coordinate cooking operations.

Work placement is not a requirement, BUT you will be asked to participate in services within an industry related environment as evidance for your assessment.

STUDY COMMITMENT

This is a full time course-blended course. You will need to attend approximately 18 hours of class, over 3 days a week, for 36 weeks. As well as the in-class component, you will need to complete approximately 10 hours of other study per week.

You may also be required to complete approximately 4 hours of additional study each week, including private study, assignment preparation, work experience and research, practical activities.

If work placement and the demonstration of practical skills are requirements of your course, due to the impacts of COVID 19 there may be a delay or modification in being able to undertake these aspects of your course in the planned timeframe. Timetables are subject to change, but will be spread over 3 days/week, you will be provided updates from the teaching section after enrolment.

SMART AND SKILLED FEES

This course is government-subsidised, meaning you pay a portion of the full course fee to TAFE NSW and the NSW Government will pay the balance. However, you must meet certain eligibility criteria for this to apply.

Depending on your previous qualifications and experience, your fee may be less than the maximum fee quoted. Your actual fee and eligibility for concession/exemption will be calculated and confirmed during the enrolment process. Payment plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

You will need to provide for yourself the following resources which you will keep when you complete your study:
In addition you are required to purchase uniform, toolkits. Plus prescribed text (didasko) for this course at a total cost of approximately $20 per unit. Uniform and tools are required from the first lesson and all practical classes. Further information is provided with your timetable.
