Across five-days you’ll learn from an exceptional Patissier in a commercial kitchen at the Australian Patisserie Academy. This course is perfect for serious food enthusiasts. Gain essential patisserie skills in traditional processes and techniques as you master the art of presentation to enhance the dining experience.
During this course you'll learn to:
Hand-temper chocolate decorations and garnishes
Create smooth Italian meringue macarons by styling, piping, colouring and flavouring
Work with vegan pâte sucrée, pâte sable crumble and a variety of fillings to create tarts and tartlets
Work with variety of entremet elements including, jaconde sponge, vanilla bean mousse, almond praline and vanilla crème brulee
You'll leave this course with:

A macaron tower, tarts and tartlets and a detailed recipe book to take home with you
