Through a mixture of theory and practical course work, learn to:
follow the order of operations for wild game harvesting
remove the internal organs from wild game animals
sharpen and maintain knives
operate and clean a game harvesting vehicle
identify diseases in game animals
use safe and hygienic work practices.

During your study you’ll need to provide your teacher with the following evidence:
You must be able to work with a qualified licensed harvester in the field while completing the course materials. You will need to show evidence for your assessments through videos or photographs.
Students are responsible for organising their supervision with a qualified licensed harvester. This will be at an additional cost to the student including fees payable to the licensed harvester, travel, accommodation and associated costs.
To become licensed as a game harvester, you must: gain accreditation with the NSW Firearms Registry, and apply for a game harvester licence with the NSW Food Authority. For more details, see the licensing section below.
To be prepared for this course, we recommend that you have:
the ability to undertake practical, physical work
the capability to work with a licensed harvester and alone and at night
the ability to remove the internal organs from a wild game animal carcase
an understanding of licensing requirements from the NSW Food Authority
an intermediate level of physical fitness.

This is a licensed occupation. After you successfully complete the Statement of Attainment in Game Harvester, you must complete 2 steps to become fully licensed and accredited to work in industry:
1. Successfully pass a firearms accuracy assessment and gain accreditation. Visit NSW Firearms Registry for more information. You’ll need this accreditation first before you can apply for a licence from the NSW Food Authority. 2. Successfully apply to the NSW Food Authority for a game harvester licence.
