Dream of buttercream

Sori Jeong worked as a chef in some of Sydney’s best hotels before discovering her real passion: cake decorating, especially the art of buttercream flowers. Determined to master the skills needed, Sori travelled to Korea for intensive specialist training.

“I learned the complex art of buttercream flowers from some of the industry’s best,” says Sori. “They helped me to understand the precision and intricacy of the art, which I continued to practise until it became second nature.”

Back in Sydney, Sori opened IncrEdible Flower Cakes, and her stunning creations were in high demand.

In 2017, Sori joined the team of experts at TAFE NSW Australian Patisserie Academy, where she teaches a range of courses in cake design and decoration – from baking for novices to advanced classes for professionals looking to upskill.

Born into three generations of Italian bread and patisserie specialists, Luigi Stivaletta’s passion is for all things sweet. He’s highly skilled across bread, bakery, patisserie, chocolate, sugar artistry and cake decorating. With a 16-year teaching history and a number of gold medals to his name in national and international competitions, Luigi is a versatile, passionate and talented, and a technical all-encompassing teacher.

Yves’ skills and dedication have taken him around the world, working and developing his style in places as diverse as France, Japan, Ghana, Ireland, Canada, Luxembourg, the United States and Australia. A self-described pastry geek, his passion is for technique and his philosophy is all about creating elegant and clean desserts while respecting the flavours of his ingredients. Outside of the kitchen, he is involved in every aspect of the industry across competitions, pastry clubs, international events and social media.

At 10 years of age, Handi began working in the family cake shop in Indonesia and his passion and exceptional skills have allowed him to work around the world. With over 20 years of experience in making, decorating and sculpturing cakes, Handi has gained a reputation as an exceptional, multi-award winning cake artist. Handi is not only a gifted cake decorator, his friendliness, charisma and passion for decorating combine to make him an exceptional teacher.
